#Food Balsamic Cherry Glazed Lamb Chops

I’m back in the kitchen!  I absolutely love cooking! Most days I do it for myself, sometimes for friends, and when I can I cook for family.  I love feeding people and leaving them with full tummies and clean plates.  A few weeks ago I challenged myself to buy a rack of lamb, and do something with it.  It sat in the freezer for a while, and I finally decided that it can’t be harder than anything else I’ve done (I made Thanksgiving dinner for over 15 people last year).

I took a look in my cabinets and my pantry to figure out what exactly I’d do with that big hunk of meat.  I wasn’t sure if I should roast the whole rack, cut it into chops, or throw it on the grill.  I don’t have a grill and I’m pretty impatient so chops was the final call.

I bought a bottle of really good balsamic vinegar a few months ago and I picked up some dried cherries to go in my salad. I thought that would be the start of an amazing glaze for the lamb chops.  I was right.  I paired the glazed chops with some basic sides, I was hungry and in a rush to eat the chops.  Just a little rice and roasted sweet potatoes.  I put olive oil, salt, red pepper, and honey on the potatoes and cooked the rice the good old fashioned way.  Try this recipe out and let me know what you think!

Instructions
Lamb Chops
  1. **If you prefer a medium rare chop, no need to finish in the oven.
  2. Preheat oven to 375 degrees
  3. If your lamb rack has not been trimmed, do that now. Then cut the rack into individual chops
  4. Combine salt, pepper, and lamb seasoning blend in a small bowl
  5. Season all sides of the chops with the seasoning mixture.
  6. Heat a heavy skillet over medium high heat
  7. Add in a drizzle of olive oil
  8. Sear the chops, about 4 at a time, on each side for about 5-6 minutes for medium rare
  9. Set the seared chops on a baking rack
  10. Repeat for the remaining chops
  11. Baste the chops with the glaze (instructions below)
  12. If you prefer medium to medium well, place the rack of chops in the oven for about 7-10 minutes
  13. Remove chops from oven and let them rest
  14. Drizzle with remaining glaze
  15. Enjoy!
Glaze
  1. Heat a small saucepan over medium heat
  2. Add in balsamic vinegar and sugar
  3. Stir constantly until mixture is reduced by half
  4. Reduce heat to low
  5. Stir in dried cherries
  6. Add salt and pepper to taste

The amount of sugar, salt, and pepper can be adjusted to fit your desired level of sweetness and saltiness
